For the time being, Bart De Pooter is still preparing sea bass and wild boar in his two-star restaurant Pastorale in Reet, but soon he will stick to vegetable ingredients. In the new five-star Sapphire House Antwerp hotel, he opens WILD|n and PLANT|n, two restaurants with only vegan dishes on the menu. His wife is the manager of the hotel, which will open in April and which also houses the room service and minibar vegan will be. “The time has come to show people that plant-based dishes are just as full and tasty, and that we can surprise our guests with them,” says De Pooter.
