INGREDIENTS FOR 4 PEOPLE:
4 salmon fillets of 125 g
300 g of fennel
1 onion 290
1⁄2 lemon
20 g of extra virgin olive oil
a bunch of fresh parsley
salt

Method

Clean the fennel and cut it into slices (keeping its beards aside). Then cut the onion in half. Boil fennel and onion in salted water for 20 minutes, drain and set aside. Chop the parsley and squeeze the lemon.

Blend the fennel and onion with the blenderadd the lemon juice, the chopped parsley and a pinch of salt.

Heat a grill on the stove e grill the salmon, then add salt and place on plates. Add the fennel and onion cream, the fennel beards, finally seasoned with raw oil and serve immediately.
