Brown Gravy and French Fries – Canadian Poutine

Chef Risto Mikkola does like many other Finns: regularly pushes a tray of frozen French fries into his home oven.

Mikkola’s favorites are long and thin french fries, which get a better crispy surface in the home oven.

Try french fries with brown sauce. Shockingly good.

Poutine is a Canadian delicacy with french fries, cheese and brown gravy. The combination works really well.

While preparing the sauce, Mikkola had a small accident. He was supposed to add a tablespoon of pickle broth to the sauce, but it ended up being desi.

– It was luck in the accident. The pickle broth increased the amount of acid in the sauce, which was ultimately a really good thing. A strong acid suits this dish well. You really don’t need ketchup.

Läskisoosi is one of Mikkola’s favorite dishes, so it inspired him this time.

This dish has all the same elements as a good lässä sauce: potato, brown sauce and pork ribs.

Overcooked pork ribs are not difficult to prepare at home either, but you can set aside several hours for it. Namely, it should be cooked gently and at a low heat, so that its structure remains intact despite being overcooked. The best result is obtained by cooking overnight.

– Then the pig will melt in your mouth. The side and neck of the pork make extremely good dishes by slow braising. They are still affordable.

French fries

800 g oven-ready frozen french fries

1. Roast the potatoes in the oven according to the instructions on the bag.

Brown sauce

75 g of butter

1 dl wheat flour

1 l meat broth

0.5 tsp allspice

1 teaspoon of salt

1 dl pickle broth

1. Melt the butter in a pan. Add wheat flour. Brown on medium heat while stirring until the butter-flour mixture is dark brown.

2. Add the meat stock in small portions with the same spiral mixer while mixing well.

3. Add the rest of the ingredients and let the sauce simmer slowly for 30–45 minutes.

Pickle broth

0.5 dl brandy vinegar

1 dl sugar

1 dl of water

1 teaspoon of salt

1. Boil and cool.

Marinated red onion

2 red onions, chopped

0.5 dl red wine vinegar

2 tablespoons of sugar

0.5 tsp of salt

1. Mix all the ingredients together and let marinate for at least one hour.

Pickle Metana

1 small diced pickle

125 g of whipped sour cream

1. Mix the ingredients together.

Pork chop

1 kg of pork loin

2 tablespoons of salt

1 tablespoon allspice powder

1 tablespoon of powdered bay leaf

1. Rub the spices on the pork flank and place the flank in the baking dish. Roast in the oven at 80 degrees for 10–12 hours.
