Andalusian gazpacho, refreshing and healthy

Ingredients

  • 1 kg of ripe tomatoes

  • 1 cucumber

  • 1 green pepper

  • 1 clove garlic

  • 50 g of white breadcrumbs

  • 100 ml of extra virgin olive oil

  • 50 ml of white wine vinegar

  • 1 teaspoon salt

  • Cold water

To decorate

  • 1 boiled egg

  • Serrano ham

Preparation

  1. Wash and chop the tomatoes, cucumber and green pepper.

  2. Peel and cut the garlic clove into small pieces.

  3. Then, soak the white bread crumb in water for a few minutes and add all the above ingredients to the blender jug, along with the olive oil, vinegar and salt.

  4. Blend everything at maximum power for a few minutes until you see that the mixture is smooth and homogeneous.

  5. Then add cold water little by little, until you get the desired consistency.

  6. Taste and adjust the point of salt and vinegar to taste.

  7. To serve, cut the boiled egg into small pieces and chop the serrano ham that will serve to decorate the dish.

Fried fish, authentic Andalusian frying

Ingredients

  • 500 g of fresh fish (such as anchovies, squid, prawns or cuttlefish)

  • Wheat flour

  • Extra virgin olive oil

  • Salt

  • 1 lemon

Preparation

  1. Clean and wash the chosen fish well and dry it with kitchen paper.

  2. In a deep plate, mix wheat flour with a pinch of salt.

  3. When you have the flour ready, pass the fish through it, making sure that it is well floured on all sides.

  4. Heat plenty of extra virgin olive oil in a frying pan or fryer and fry the floured fish in batches, until golden and crisp (it is important not to overload the frying pan so that the oil maintains the temperature and the fish is fried evenly).

  5. Remove the fish with a slotted spoon and place it on absorbent paper to remove excess oil.

  6. Serve hot, accompanied by a slice of lemon to add a touch of acidity.

Shrimp omelette, Cadiz flavor

  • 100 g of peeled shrimp

  • 1/2 onion

  • 3 eggs

  • 50 g of wheat flour

  • 1/2 teaspoon baking powder

  • Extra virgin olive oil

  • salt and black pepper

Preparation

  2. When you’re done, add a little olive oil to a pan and fry the onion over medium-low heat until transparent.

  3. Add the shrimp and cook for a couple more minutes, until they are cooked through.

  4. In a bowl, beat the eggs and add the sifted flour and baking powder.

  5. Mix well to obtain a homogeneous mass and add the onion and shrimp mixture, mix well and season to taste.

  6. Then, heat a skillet with a little olive oil over medium heat.

  7. Pour the mixture into the pan and spread it well so that it is even.

  8. Cook the tortilla for a few minutes on one side, until it begins to set and turn golden.

  9. With the help of a plate, turn the tortilla over and cook on the other side until golden and well cooked.

  10. Serve hot or at room temperature, cut into portions.
