The nettles are at their best when young picked and enjoyed.

Nettle is a rare wild herb that Finns can use nettle in cooking. Many other wild herbs are not collected.

Nettle is real super food. There is hardly any competitor for its nutrition. Nettle contains iron in many ways compared to spinach. It also contains a lot of vitamin C. There is more calcium than in milk.

The best time to collect nettles is spring and early summer before flowering. Gentle, soft top shoots are the best pickable.

The harvest of the nettle can be extended by mowing a large plant, which will make new delicious top shoots pick up in a couple of weeks and the wild herb is available throughout the summer.

The nettles go for cooking just like spinach, but with the difference that the nettles never enjoy raw. They are either dried and ground into powder or leaves are used, for example, to season tea or the leaves are rolled before use to remove the acid acids.

It is a good idea to pick up the nettle at a time. The number of nettles will shrink to about a quarter after the burst. And don’t forget the gloves and a long sleeve shirt. Young nettles are also annoying.

After picking, soak the nettles, burst them and cool the rumbled leaves with ice water. This preserves the deep green color of the nettles. Finally, pat the nettles between the kitchen paper. If you do not use this natural delicacy right away, you can freeze the nettle or store them in the refrigerator. They remain cool for 4-5 days.

  • Especially the nettle dries in a beautiful green when it is first bursting. After the bursting, the nettle is quickly cooled under cold, running water, dried with kitchen paper and spread to dry.
