Zucchini halloumi fritters

(for 4 people)

1 thin zucchini

1 pkt halloumi

2 eggs

cooking oil for frying

1. Grate the zucchini. Squeeze the liquid out of the grater by hand. Grate the halloumi. Add the halloumi and eggs to the grated zucchini.

2. Pour about a centimeter layer of cooking oil into the pan and fry small patties from the dough in the hot oil. Allow the fritters to fry for a sufficient time, approx. 3-4 minutes before turning. This way the surface becomes crunchy and the fritter does not fall apart when flipped. Serve the fritters with a fresh salad, cooked quinoa and a herb sauce mixed with cream cheese.
