Lettuce stalks or onion roots can grow back into plants. This cultivation method for kitchen waste is called regrowing. It is usually uncomplicated, environmentally friendly and saves money – and you don’t need a garden or balcony.
Regrowing isn’t about covering all of your veg needs with this vase or pot grow. “You take the waste that’s there and give it a second life,” says Melissa Raupach, co-author of the book Regrow your veggies. She regards the method as a “return to the natural”.
► This is how it works: All you need is a location that is as bright as possible, ideally a window seat. In addition, some glasses and flower pots, water and earth.
► And then you need leftovers like the stalk of a romaine lettuce. According to Raupach, it is well suited because it “grows back very reliably”.
► The stalk should be at least five centimeters high so that it fits well in a water glass. It is important that about half of them are always in the wet.

After five to ten days, new roots appear and fresh green appears on the upper part of the lettuce stem.
Now the old new romaine lettuce can be planted. Here, too, only the stalk is placed in the ground. The newly emerging leaves must remain free because they need light.
