Umami fries with seaweed salt and black bean mayo | what are we eating today?

We first spotted these fries with seaweed salt at Yum Bun in London. With your bao buns you get crispy fries, sprinkled with finely ground seaweed. We named them umami fries. And speaking of baptisms (and umami): with these flavor bombs we serve an Asian black bean mayo with black garlic. You don’t know what you taste…!

Ingredients

Snack or side dish for 4 people:

  • 700 grams of fries (fresh, frozen or homemade)
  • 2 nori sheets
  • 1 teaspoon salt

For the black bean mayo:

  • 1 egg, at room temperature
  • 250 ml vegetable oil
  • 1 tablespoon rice vinegar
  • Fermented black bean paste (toko or supermarket)
  • 2 cloves (fermented) black garlic

Prepare the fries according to the desired preparation method.

Make the seaweed salt. This is best done in a coffee grinder. Tear the nori sheets into small pieces and grind them into a fine powder in the coffee grinder. Alternatively, you can crumble the nori sheets with your hands and chop through them with a kitchen knife. Place the seaweed powder in a bowl and mix with the salt. Put away.

Meanwhile, make the black bean mayo. Squeeze the black garlic from the cloves and rub into a paste with the blade of your knife. Put all the ingredients for the mayonnaise in a tall measuring cup, put the immersion blender in it. Turn it on and slowly raise it up until you have a lumpy mayonnaise. This takes less than half a minute!

When the fries are cooked, sprinkle them immediately with the seaweed salt. Serve the umami fries with the black bean mayo.

Delicious as a snack, but also with a piece of salmon and some stir-fried pak choi.
