Jack fruit is excellent in a vegetarian or vegan diet, because its taste does not have the side tastes that many people complain about when it comes to meat substitutes.

Jackfruit tastes exactly the way you season it. The mild flesh takes on the taste of spices and jams. The texture is reminiscent of overcooked pork and quite meat-like.

The jackfruit is a huge, rough-skinned, Asian fruit that can grow up to 30 kilograms. When ripe, it has a slightly pineapple-like texture and a mild taste, which makes it perfect for both sweet and savory dishes.

Peeled jackfruit can be used as a filling for tacos, tortillas and hamburgers, best seasoned with bbq sauce, but it can also easily be used as a pizza topping or a tasty vegetable sauce to cover rice.

Jack fruit can be bought canned in Finland. It is mostly found preserved in water and this is the best version for cooking.

This is how you use canned yak

1. Open the jar, drain the water and rinse the yak pieces.

2. Cut out the hard middle piece from the pieces.

3. Fry the pieces in a pan until they soften and you get the pulp loose.

4. Fry onions, garlic or other vegetables in the mixture and season with bbq or chili sauce. Use as a filling for burgers, tacos, Bao buns or tortillas.

Jack burger

(for 4 people)

Jacket filling:

1 tablespoon of olive oil

2 tsp (a 400 g/ 230 g) jackfruit preserved in water

1 yellow onion

2 cloves of garlic

1 1/2 dl of cola drink, e.g. Coca-Cola

2 tablespoons of smoky bbq sauce

1 teaspoon of salt

a few grinds of black pepper from the grinder

Pickled red cabbage:

1/2 dl red wine vinegar

1 dl sugar

1 1/2 dl of water

1/2 teaspoon salt

500 g of red cabbage

In addition:

4 brioche hamburger buns

2-3 tomatoes

pickles

vegan mayonnaise

1. Start by preparing pickled red cabbage. Shred the red cabbage. Boil all the ingredients for the pickling broth and pour the sliced ​​red cabbage on top. Leave to season for at least 30 minutes.

2. Prepare the jacket filling. Drain and rinse the jackfruit, cut off the hard parts of the jackfruit and cut the fruit into a few pieces. Chop the onions.

3. Saute jackfruit and onions in olive oil until they soften a little. Add the cola drink and cook until the liquid has evaporated and the jack can be torn with a fork. Season with bbq sauce, salt and black pepper.

4. Heat the hamburger buns and slice the tomatoes. Fill the hamburger buns with toppings to your taste and enjoy.
