Baking in cottage conditions is not always easy or even possible. The shop’s ready-made bun pietko is the solution when making a cake base is not possible and you should have something spectacular to offer on the coffee table.

Pulla pitko can usually be found in even the smallest grocery stores, so this cake can be made anywhere in Finland. The brand of the cake doesn’t matter, but choose a cake that is not already sliced, because for the cake you are supposed to split the cake yourself. With or without raisins, let it be a matter of taste.

A summer bun pie is made by splitting a bun in half in the style of a laskais bun and filling it with raspberry jam, fresh berries and whipped cream. Strawberries, raspberries, blueberries, currants, and gooseberries are suitable berries for bun pitko cake, so use what’s in the garden according to the season. You should also make use of what you can find in the cupboard as jam. For example, applesauce fits perfectly inside a pie.

Bun pie cake

1 bun braid

2 dl whipped cream

0.5 dl raspberry jam

2-3 dl fresh berries

1. Use a bread knife to split the long bun in half so that you get a base and a lid from the long bun in the style of a traditional bun.

2. Whip the cream.

3. Spread a layer of raspberry jam on the bottom of the bun.

4. After that, spread the whipped cream on the bottom.

5. Chop the biggest berries into smaller ones and add the berries on top of the whipped cream. Put the lid on the bun and decorate as you wish.

TIP

Instead of whipped cream, you should choose whipped cream for the cake when it’s hot, because when it’s heated, it withstands the heat a little better than whipped cream. You can also make the whipped cream thicker by mixing in curd or vanilla cream powder. One option is to make foam in the heat from plant-based products, of which there is already a comprehensive selection in stores. Plant-based foams contain thickeners, so they withstand heat a little better than cream.
