Time does not stand still in the Kädtler bakery. This is ensured by Stefan Kädtler (52), master baker in the 3rd generation, who winds grandfather’s old grandfather clock once a week.
Regular commuting calms him down. That’s why he collects old grandfather clocks. But another hobby provides a balance to the stressful work: “I own twelve bee colonies, each with around 60,000 bees.”
The hobby beekeeper sells the honey in his bakery at Danziger Straße 135.
And so that his bees can find enough food, two years ago he created a meadow orchard with 100 fruit trees in Oberhavel in cooperation with the nature conservation association.
Kädtler: “In future I will get my fruit for my cakes there.”
His concept is: “We produce honest products that we also eat ourselves.” Only the purest ingredients are used in his baked goods.
One of the reasons why he was chosen by the Jewish community as the only kosher baker in Berlin.
“The requirements are strict. I am checked by the rabbi or a student at the rabbi school three times a week,” says Stefan Kädtler. “They also light the oven according to the old custom.” He has the kosher margarine delivered from Antwerp.

But he doesn’t want to do without one ingredient: “Quark, I need that for my cheesecake. And I like to eat egg checkers best.”
He is certain that his grandfather clock in the shop will continue to tell the time in the future. His son Paul (14) announced after his student internship: “I’ll be a baker too!”
