Central (Lima) has been crowned as the best restaurant in the world during a gala held tonight at the City of Arts and Sciences in Valencia. The restaurant succeeds Geranium (Copenhagen) on the throne, which was voted number one last year. They complete the podium of the list of The World’s 50 Best Restaurants 2023 Enjoy (second, and best in Europe) and diverxo (third).
The pools did not just agree. Some pointed to Central, which had been second in 2022; others assured that the ‘number one’ would be for the project shared in Barcelona by Oriol Castro, Mateu Casañas and Eduard Xatruch, because it had been third and has the endorsement of two stars in the 2023 Michelin guide. for the ‘triestrellado’ diverxo, which was fourth last year and is led by a chef, David Muñoz, who had been awarded as the best chef in the world for the second time in a row. In the end, he has won the establishment in Lima, while the Catalan is only one step away from heaven and the man from Madrid, with the bronze, two.
Spanish restaurants in the ‘top 50’
Are six Spanish restaurants that have been placed among the 50 best in the world, demonstrating once again that the country’s gastronomy continues to be among the most prestigious on the planet. In addition to Enjoy and diverxoappear etxebarri (Axpe, Guipúzcoa; 4th, going up two places compared to last year), Quique Dacosta (Dénia, 20th from 42nd in 2022), elkano (Guetaria, 22nd, falling from 16th) and Mugaritz (San Sebastián, 31st, after falling from 21st).
Authentic gastronomic institutions such as Noma, which has announced its closure by 2024, El Celler de Can Roca, Osteria Francescana, The Fat Duck, Mirazur or Geranium, among others, do not appear on the list, because they have already been number one and have become part of the Best of The Best, a kind of Olympus whose members no longer compete to lift the title. Once they touched the sky, they stay in it.
The vote of 1,080 experts from around the world
To draw up the list, which this year has reached its 21st edition, the organizers have taken into account the votes of 1,080 culinary experts from 27 regions of the worldincluding writers, critics and restorers.
Before the gala this Tuesday, and to warm up the engines and raise expectations, the organizers announced the list of restaurants ranked between 51st and 100th. Among them are the Spanish aponient (64th), Azurmendi (81st), Enigma (82nd) and Ricardo Camarena (96th).
Icon Award for Andoni Luis Aduriz
It has also been communicating various distinctions in recent weeks (which have been delivered tonight), such as the Icon Award for Andoni Luis Aduriz (Mugaritz)he One to Watch (something like the restaurant to take into account) for Tatiana by Kwame Onwuachi (New York) and the award for World’s Best Female Chef, which has fallen on the Mexican Elena Reygadas. There has also been a memory of the late Scottish chef Jock Zonfrillo, winner of the 2018 Basque Culinary World Prize.
In short, Valencia, which has taken over from London as the venue for the gala of The World’s 50 Best Restaurants, has experienced a festival of haute cuisine not only tonight but throughout the month of June because, in addition to the ceremony this Tuesday, it has hosted the #50BestTalks thought leadership forum during the month of June; the collaborative gastronomic talks open to the public ’50 Best Signature Sessions’; and the Chefs’ Feast, with the best products and Valencian cuisine. In addition, some of the world’s leading figures in cooking have shared their knowledge with local cooking students.
