The secret of restaurant Poortman in Veeningen? ‘Lots of craft work’

A small toast before the work is still possible. “To celebrate the success with the staff,” said Grendelman. That is also allowed, because the award indicates that a restaurant has an excellent quality ratio. There are two restaurants in Drenthe that have received Michelin recognition. One is Sukade in Meppel, the other Poortman in Veeningen.

“We are now in the Michelin booklet. There are people in the Netherlands and the rest of the world who go to these kinds of restaurants. That makes it extra special.”

Grendelman built the restaurant together with his wife. The secret? Do everything yourself. “It really is a craft. We make everything ourselves. Think of bread, gravy or sauces. It can be anything, but you can distinguish yourself with that.”

They can put all those talents into practice today. The restaurant is open again for the first time since the award. A large group comes for lunch, so the staff can get back to work. “They are people who often come to eat with us. But it is extra special, one person has received a royal award.”
