The legendary chocolate mousse was removed from the dessert table on the Swedish ship – the Buffet people got nervous

There is one dessert on Tallink Silja’s ships that everyone who has ever been on a cruise will have a taste memory of. The tray of chocolate mousse standing on the buffet’s dessert table gets emptied at a good pace during the setting, year after year.

– It’s everyone’s favorite from baby to toddler. Everyone likes it, confirms Tallink Silja’s creative kitchen manager Joonas Maunula.

Chocolate mousse is available on all Tallink Silja ships. The mousse is made from chocolate mousse supplied by Isomita.

– The supplier has remained the same at least since I came to work at the shipping company in 2011. Possibly the supplier has been the same much longer, says Maunula.

Replaced with a cake

A few years ago, Tallink Silja decided to renew the buffet’s desserts. The chocolate mousse was taken away from the standing table, and a chocolate mousse cake came in its place. It didn’t take long when customer feedback started flooding in on the topic. Classic mousse was demanded back.

The kitchen staff tried to stick to their new line, but eventually buckled under the pressure. A tray of familiar chocolate mousse was brought back to Linjasto.

– It was thought that nice new desserts would be offered, but the idea didn’t work. We have to remember that we are doing this for our customers and not for ourselves. Repairs sometimes have to be done, says Maunula.

Chocolate mousse is made by adding cold milk to the mousse ingredient, after which the mixture is whipped. The result is a velvety smooth chocolate mousse, which takes an average of one hundred liters per day.

What does Maunula think makes the classic dessert so popular?

– It’s a real breath of the past. There’s no more rustic dessert than chocolate mousse.

Chocolate mousse can be called a real classic dessert on all ships. In addition to Tallink Silja’s ships, it can also be found in the buffets of Viking Line and Eckerö Line.
