Blueberry stew

(for 4 people)

1 liter of blueberries

1 tablespoon of lemon juice

2–4 tablespoons of potato flour

1 1/4 dl cane sugar

1 teaspoon of real vanilla powder

Crumble:

100 g of butter

1 1/4 dl wheat flour

1 dl almond powder

1 1/4 dl cane sugar

1 teaspoon of baking powder

1 teaspoon lemon peel

1 1/4 dl of almond chips

1. Mix all the ingredients with the blueberries. With fresh blueberries, 2 tablespoons of potato flour is enough, but if you use frozen blueberries, use 4 tablespoons of potato flour.

2. Prepare the crumb by adding all the other ingredients except the almond flakes to the butter. Finally, add the almond chips, turning carefully so that the chips do not crumble.

3. Grease an approximately 20 x 30 cm baking dish. Pour the blueberries into the bottom of the pan and sprinkle the crumb mixture on top. Bake at 200 degrees for about 30–35 minutes. Serve with vanilla ice cream.
