The best cabbage box

Finnish food day is celebrated today, September 4.

Cabbage box is quite a traditional home food. Photo: Roni Lehti.

The cooling weather calls for oven dishes, and what could be a better oven dish than a long-simmered cabbage box? So, in honor of Sunday, spin a classic Finnish home-cooked meal and double the batch, and there will be plenty of food for the next day as well.

If you have picked up some ripe lingonberries from the forest, the side dish for the cabbage box is also clear. Mash the lingonberries with the sugar with a fork, nothing else is needed.

Cabbage box

1 medium cabbage

1 l meat broth

2 cups of rice

400 g minced meat

1 onion

1 carrot

1 teaspoon of salt

1 tablespoon marjoram

1 tsp white pepper

0.5 dl of syrup

1. Cut the cabbage into strips and put the cabbage strips and meat broth into the pot. Let the cabbage strips simmer until they have softened.

2. Cook the rice according to the instructions on the package.

3. Brown the minced meat with chopped carrot and onion in a pan and season with salt, pepper and marjoram.

4. Pour the rice, fried minced meat and cabbage with the meat broth into the baking dish. Drizzle over the syrup.

5. Bake at 200 degrees on the lower level of the oven for about 1 hour. Cover the pan with baking paper or foil if it threatens to darken too much.
