Stéphane Buyens (63) of hostellerie Le Fox in De Panne loses one Michelin star and therefore has one left. He announced this himself on the eve of the presentation of the latest Michelin guide. An even bigger surprise is that the flamboyant chef will completely stop his successful business within eighteen months. “It was not an easy decision, but there was no other way,” he responds from sunny Spain.
