Salen nettles
Dough:
2.5 dl of red milk
3 eggs
1.5 dl semi-coarse wheat flour
100 g of crushed nettle leaves, dry-pressed and finely chopped or pureed
1 tablespoon fine sugar
less than 1 teaspoon of fine salt
1/4 teaspoon ground nutmeg
Filling:
50 g of ripe corn
50 g of fresh cucumber
50 g of tomato
50 g of American salad
30 g of mayonnaise
1. Peel the leaves from the nettles, first wash them in cold water and then immerse them in boiling water for 1 minute, cool rapidly in cold water.
2. Squeeze dry. Finely chop with a knife or use a mixer and make a fairly smooth puree or puree.
3. Prepare a normal pancake by mixing all the dough ingredients together. Finally, add the pre-treated nettles as well.
4. Let the dough swell for 1 hour. Fry the pancakes in a pan in butter or oil or a mixture.
5. Fill the finished pancakes with different vegetables or roots.
6. Cut all the ingredients finely, tie the ingredients together with mayonnaise. The mayonnaise really binds the ingredients together nicely and brings the necessary juiciness.
7. The finished rolls can be well wrapped in fresh film and allowed to cool properly in the refrigerator.
8. Can be enjoyed even as an appetizer while waiting for the main course from the grill.
