Caramelized bacon combines sweet and salty.

– Bacon is such an infinitely good product that it makes no sense, chef Risto Mikkolan the opinion does not remain unclear.

According to Mikkola, bacon goes with everything: both salty and sweet.

In Tiktok, Mikkola came across candied bacon. I had to put it to the test right away. The end result is a great home sofa movie treat that combines salty and sweet.

Mikkola warns that the bacon should be eaten in one sitting.

Caramelized bacon

3 packs of American bacon

1 dl of BBQ sauce (ready-made store-bought sauce)

1 dl sea buckthorn syrup (either store-bought sauce or homemade)

1. Spread the bacon slices (8 slices/pan) on baking paper on the baking tray so that the bacons do not touch each other.

2. Brush 8 slices with BBQ sauce and 8 slices with sea buckthorn syrup. Leave 8 bacon slices without sauce.

3. Bake the bacon in a 200-degree oven for 10 minutes. Cool for a moment.

Sea buckthorn syrup

1 dl sea buckthorn juice

1 dl sugar

1. Put the ingredients in a pot and cook slowly for about 5–10 minutes. Stir at the same time so that the sugar does not burn to the bottom.

Candied the bacon

4 dl of water

4 dl sugar

1. Combine the ingredients in a pot and cook the mixture without stirring for about 10 minutes.

2. Test that the sugar syrup hardens. Drop the sugar syrup into the ice water.

3. Dip the cooked bacon slices one at a time into the sugar broth. Remove with tongs and briefly drain the sugar syrup off the surface of the bacon. Immerse the bacon in ice water.

4. Place the bacon on the baking paper to dry for about two minutes. Enjoy the same day.

Finally, dip the bacon immersed in the sugar broth in ice water so that the sugar solidifies on the surface of the bacon.
