The high season for rhubarb pies is here again.

Under the shell, the rhubarb is succulent. And yes, correctly guessed: the caramel’s sweet crust crumbles in the oven to divine.
– This rhubarb pie with oats is my favorite of all rhubarb pies, because this works well even with frozen rhubarb, because the appearance of rhubarb does not matter.

Rhubarb pie with oatmeal
(For 6 people)
Kauratosca:
150 g butter
2 dl cane sugar
½ dl light syrup
½ dl cream
3 dl oatmeal
1 1/2 dl spelled flour
1 teaspoon baking powder
Filling:
500 g of rhubarb
1/2 dl cane sugar
1/2 tablespoon cornstarch
1 teaspoon genuine vanilla
for serving thick vanilla sauce or ice cream
1. Grease the pie pan (diameter 24 cm). Dice the rhubarb and spread them in a pan. Mix the sugar, cornstarch and vanilla powder together. Sprinkle the mixture evenly on the surface of the rhubarb.
2. Melt the butter in a saucepan. Add sugar, syrup and cream. Remove the pan from the stove and mix the remaining ingredients. Spread the icing over the rhubarb.
3. Bake at 200 degrees in the middle of the oven for 25-30 minutes. Serve a pie with custard.
Remember this rhubarb!
1. Rhubarb is only eaten by stalks. The leaves are toxic and should not be used for cooking or as food trays in table setting.
2. Rhubarb binds calcium, so it is recommended to eat dairy products with rhubarb treats.
3. Rhubarb is not suitable for gout patients or those suffering from joint disease or under one year of age.
