Ratatouille is a popular classic vegetable stew. Once you taste it, you will no longer be surprised by the popularity of fried food.

Ratatouille is made from eggplant, bell pepper, zucchini and tomato and seasoned with Mediterranean herbs. Making a vegetable stir-fry requires some chopping, but the pieces are left fairly large, which speeds up the chopping process.

2 peppers

2 eggplants

1 zucchini

1 onion

4 cloves of garlic

1 tsp canned tomatoes

1 teaspoon of salt

1 tablespoon of sugar

2 teaspoons of white vinegar

1 tablespoon of Provence herb mixture

olive oil

1. Chop the vegetables into good-sized pieces and mince the onion and garlic.

2. Drizzle olive oil on the pan and add the eggplants, zucchini and peppers to the pan. Let the vegetables fry for a while in a pan on medium heat, stirring.

3. Add onions and garlic and spices to the pan. Stir for a moment.

4. Finally, add the tomatoes with their juices and let them simmer under the lid for about half an hour.
