Portuguese caldo verde | What are we eating today

Portugal may be a country full of sunny dishes, but Portuguese chefs also know how to protect themselves against colder weather.

They do this with appropriate, warming dishes. Caldo verde, for example: a filling soup with kale and crispy slices of sausage.

Ingredients

For 4 persons:

  • Olive oil
  • 1 large white onion, finely chopped
  • 600 grams potatoes, peeled and cubed
  • 2 cloves garlic, finely chopped
  • 250 grams of kale chips
  • 1 liter of chicken stock
  • 1 tablespoon apple cider vinegar
  • 1 chorizo ​​sausage, thinly sliced

This is how you make it:

Heat a dash of olive oil on medium heat and fry the onion. Add the potato cubes and continue to fry and stir well until they are slightly golden brown. Then add the garlic and fry for another minute.

Add the chicken stock and let it boil. Then reduce the heat and let it simmer for 20 to 25 minutes, until the potatoes are almost falling apart.

Mix the soup so that it is nicely thickened, but make sure there are still some potato pieces here and there. Then add the kale chips. Reduce the heat and let it simmer for another 10 minutes. Season with salt and pepper and add the apple cider vinegar.

Fry the chorizo ​​slices until crispy in a separate frying pan and let them drain on a paper towel.

Divide the soup among bowls and finish with the crispy chorizo. Delicious with a piece of baguette for sopping up.
