Caprese Pie

3 tomatoes

400 g mozzarella (3 balls)

1 large sheet of puff pastry

1 dl of pesto

fresh basil

1 tablespoon of olive oil

seeds such as chia seeds or sunflower seeds

1. Thaw the sheet of dough according to the instructions on the package. Roll it out a little bigger and put it on baking paper on a low baking tray. Prick the bottom with a fork and cut the edges of the dough so that the knife does not reach the bottom. Preheat the oven to 220 degrees.

2. Squeeze plenty of liquid out of the mozzarella so that the pie doesn’t get wet. Cut the mozzarella and tomatoes into slices. Put pesto on the bottom of the pie and place the tomatoes and mozzarella alternately on the bottom. Brush the edges of the dough with egg or olive oil and sprinkle the edges with seeds.

3. Bake the caprese pie in the lower part of the oven for about 20–25 minutes. Finish with fresh basil and a pinch of black pepper. If you want, you can drizzle balsamic on top of the pie.
