Overripe broccoli may sound suspicious. But don’t judge until you taste.

According to Moilanen, this pasta is the real remote day food. All you have to do is throw the broccoli in the oven to toast and then you can work in peace. The pasta sauce is prepared by itself in the oven. Then just boil the spaghetti water and soon the food will be on the plate.

Broccoli gets flavor from anchovies and chili. When it simmers in the oven for a couple of hours, the texture of the broccoli becomes soft and pesto-like.

Overcooked broccoli pasta

(for 4 people)

1 kg of broccoli

2 dl olive oil

5 anchovy fillets

4-5 cloves of garlic

1-2 teaspoons of chili flakes

1 teaspoon of salt

2 teaspoons of garlic powder

black pepper

100 g Parmesan

a splash of good olive oil

1. Use a knife to remove the broccoli buds. Peel the stem and slice it. Peel and cut the garlic into pieces. Boil broccoli for 3-4 minutes in salted water. Drain.

2. Heat the oil in a large ovenproof pan with a lid, add the anchovies, garlic and spices. Stir until the anchovies dissolve in the oil. Add the broccoli.

3. Cook broccoli in a pan in the oven under the lid at 150 degrees for two hours. Take the pot out of the oven. Taste the flavor and add finger salt if necessary.

4. Cook the spaghetti, grate the parmesan and add them to the pot. Soften the pasta with a couple of ladles of pasta water and drizzle some more good olive oil. Mix the pasta ingredients with two wooden spoons (broccoli is very soft and falls apart). Serve with a Parmesan veil.
