Chef and all-rounder in the food industry Teresa Välimäki frankly admits that cooking at home is boring.
– I can’t stand the heat and washing the stove annoys me. I cook a lot in the oven, says Välimäki.
Välimäki’s ingenious solution is oven tray food. All the ingredients on the same tray and in the oven for about 20 minutes.
Välimäki shared this cooking tip during the corona spring of 2020. It became a hit and you can say that the popularity literally exploded. After that, everyone made tin dishes. However, the genius of tin food has not disappeared anywhere.
Välimäki reminds us that many vegetables become really good when they are roasted in the oven even a little bit. Broccoli is one of Välimäki’s favorites. He washes, dries and chops the broccoli in real time. There will be no waste and it will be good.
Välimäki’s oven often bakes tinned food, such as this one flavored with bacon.
– We didn’t have any other meat or fish in the cupboard then, but I found bacon. I folded them into circles and broke the eggs in the middle. I also sliced broccoli and crumbled feta cheese. I love toasted feta.
With the same idea, Välimäki might also make salmon medallions. They are accompanied by potatoes and cherry tomatoes on a baking sheet. However, the potatoes must first be put in the oven for about 15 minutes to cook by themselves, and then the rest of the ingredients.
Välimäki might spin broccoli in olive oil seasoned with salt, pepper and lemon zest.
– I can eat this several days a week. The recipe is really not difficult. Finally, I tear a fresh salad or arugula onto the plate and put the cooked food on top of it.

a package of bacon
3 eggs
feta
olive oil
salt
black pepper
dried herb (e.g. thyme)
1. Place the broccoli in blocks and a few baby carrots on a tray. Add a package of bacon and crack a few eggs in between.
2. Spread a little olive oil on the broccoli and carrots and season the whole sheet with salt, black pepper and some dried herb. Then crumble feta cheese over the vegetables.
3. Bake in the oven at 220 degrees for 15-20 minutes.
