Donuts are Finns’ favorite May Day treat. There are many options for the basic doughnut, starting with the shape of the doughnut: whether it is a ball or a ring.

The dough can be made in milk or water, it can be flavored with cardamom, orange peel, vanilla or, for example, lemon-flavored curd.

A donut pretzel is rolled from a dough stick or it can be made by rolling a round bun, in which a hole is made in the middle with a finger and spread into a pretzel.

There is also plenty of choice when it comes to baking doughnuts. Rapeseed oil can be replaced with, for example, coconut fat, which gives the donuts a little more flavor.

Remember that the fat must not get too hot, 180 degrees is suitable. When frying, you have to be careful that no water splashes into the hot oil.

Donuts are fried for a couple of minutes on each side, depending on the size of the donut. After that, they are placed on baking paper or kitchen paper. When frying, remember that if the oil is too hot, it will quickly burn the surface of the donut.

You get super delicious donuts when you put filling inside them. This is the chef Risto Mikkolan in the instructions, the donuts have received a new shape and taste. Instead of giant donut pretzels, the dough is shaped into small balls that are filled with cream cheese.

– Orange and cream cheese cream is squeezed inside the fried doughnuts. The flavors of the filling support each other nicely. The donut is finished with flavored sugar, where the orange filling is repeated. Fruit peel and juice are also added to donut dough.

If there are different variations in donuts, you can find them in sims too. Brown sugar and lemon are usually used in mead. You can replace the brown sugar with regular sugar. In this recipe, in addition to lemon, mead is flavored with orange and ginger.

The orangey, fresh taste of meringue is a great match for a filled little doughnut.

Ginger mead

Grated juice and zest of 3 lemons

Grated juice and peel of 1 orange

3 tablespoons of grated ginger

4 dl sugar

15 g of yeast

1 tablespoon of vanilla sugar

2.5 l of water

10 raisins

1. Mix all the ingredients and place in a warm place for a day.

2. Strain and bottle the mead. Put 2-3 strained raisins in each bottle. When the raisin rises to the surface, there is enough carbonic acid in the mead.

3. Close the bottles and leave at room temperature overnight. In the morning, release the carbonation and reseal the bottles. Put in the cold. The meringue keeps for about 2 weeks.

A stuffed doughnut

5 dl of milk

2 eggs

2 dl sugar

50 g of fresh yeast

2 teaspoons of salt

1 tablespoon of vanilla sugar

1 tablespoon cardamom

Juice and grated peel of 1 orange

15 dl wheat flour

150 g of melted butter

1.5 l rapeseed oil for frying

1. Heat the milk to hand-warm. Beat the eggs and sugar lightly. Add milk and crumbled yeast as well as spices, grated orange peel and juice. Add the flour and fat and mix an elastic soft dough in the mixer.

2. Let the dough rise in a draft-free place for half an hour.

3. Bake the dough into round buns. Let it rise, covered with a baking cloth, for about 15 minutes.

Filling:

400 g of fresh cheese

1 dl powdered sugar

The peel and juice of 1 orange, about 1 dl

1 teaspoon of vanilla sugar

1. Mix the filling ingredients and put in a piping bag.

Sugar Icing:

2 dl sugar

Grated and dried peel of 2 oranges

1. Mix the ingredients and put in a paper bag.

Bake the doughnuts

1. Heat the oil in a heavy-bottomed pot and fry the donuts in the hot oil, a few donuts at a time. Lift the cooked donuts to drain for a moment in a dish lined with paper towels.

2. Use a knife to make a small hole in the side of the donut and squeeze the filling inside.

3. Roll the donuts in orange flavored sugar in a bag. Serve the same day with ginger syrup.

Tip!

You get more flavor when you add, for example, grated lemon or orange peel to the donuts’ decorating sugar.
