In 2017, in a hidden corner of Belgrano, the first Nemuri opened, a discreet and tasty sushi, which gradually gained its clientele. During 2020 they were fortunate to be leaders in delivery and that is how the expansion came, which was big. The new Nemuri Tera has a place with 120 seats, with a very good taste atmosphere, inspired by oriental temples, an intimate lounge, terrace with cocktail bar and drinks bar. Its gastronomic proposal was deepened, with very well prepared creative options, and an interesting cocktail menu.
“Although sushi is crossed by American fusion, such as phila cheese and sauces, at Nemuri we revalue traditional Japanese pieces. For example, we add a subtle touch of wasabi to the nigiris, something fundamental in
Japan. And we also use the Japanese technique known as suki-biki when it comes to flaking the salmon (which is completely with a knife)”, says Jhonny Idarraga, a passionate Bogotán who has passed through important sushi chains.
Within the menu, the special rolls stand out, such as the Akame (with carrot macerated in rice vinegar, wrapped in a breaded coriander salmon, cevichada sauce); the Red Sakeebi (with shrimp, salmon, and avocado wrapped in bluefin tuna, with Creole sauce and an adaptation of the Japanese tonkatsu sauce, based on oyster sauce, soy, barbecue, and ketchup); Tako (of octopus); and Black (red tuna and cucumber covered with caviar); among others.
There are also veggie rolls, rich ceviches (macerated in lime and lemon juices, coconut milk, purple onion, red bell pepper, and cilantro, accompanied by crispy sweet potato and cancha corn); rice, noodle or vegetable woks; and hot dishes such as Pacific Salmon, lacquered with oyster sauce and teriyaki. For dessert, good matcha panna cotta.
The cocktail bar deserves a special mention: Wasabi Sour, with manzanilla pisco and wasabi syrup; Haibisu, a gin and tonic with hibiscus syrup; and the Umami Negroni with a gin macerate with oyster mushrooms, among others. Let yourself be tempted.
