Pumpkin halloumi pasta
(for 4 people)
approx. 700 g of musk gourd
1/2 dl olive oil
2 pkt halloumi
in addition, 400 grams of spaghetti
salt
black pepper
1. Heat the oven to 200 degrees. Peel and dice the pumpkin into small cubes and also dice the halloumi. Spread the ingredients on a baking sheet on baking paper, sprinkle olive oil on top and grind a little more black pepper on top, if you like.
2. Roast the pumpkin-halloumi mixture in the oven until the pumpkin pieces are soft and the halloumi has acquired color on the surface.
3. Cook the pasta according to the instructions. Drain the spaghetti and mix in the roasted pumpkin pieces, halloumi and all the oil from the tray. Taste the flavor and add a little salt if needed.
Tip! You can add some herbs, such as sage or thyme, or season the pumpkin pieces with crushed garlic.
