Minced meat tortilla pie

Tortilla pie is baked in a loose-bottom pan, and ready-made tortillas are used as the base.

Tortillas are suitable not only for rolling and filling, but also as a base for pies. So if you’re looking for an easy savory pie recipe, this is for you. The easy tortilla pie is piled into a loose-bottom pan, from which the edges can be easily removed when serving.

The filling of the tortilla pie is of course made in the spirit of Texmex, but the filling and spices can easily be changed to suit your own taste. You can add, for example, beans or corn to the filling, or if you like milder flavors, leave out the jalapenos. The filling can also be made from ground beef, and either regular or whole grain tortillas can be used for the base.

Tortilla pie

1 pack of tortillas

500 g ground chicken meat

1 onion

1 tablespoon of seasoning mixture intended for chicken (e.g. Santa Maria Chicken Taco)

juice of half a lime

1 cup of flavored crème fraiche (e.g. Valio Crème Fraiche Salsa)

jalapeno slices (canned)

250 g cherry tomatoes

1 dl grated cheddar cheese

fresh coriander

oil for lubrication

1. Grease a springform pan with rapeseed oil.

2. Place the tortillas on the bottom and sides of the springform pan.

3. Fry the minced meat and chopped onion and season with the taco seasoning mixture according to the instructions on the bag. Finally, squeeze in the juice of half a lime.

4. Pour the minced meat filling over the pie base.

5. Add creme fraiche, jalapeno slices, cherry tomatoes and finally grated cheese on top of the minced meat.

6. Bake the pie at 175 degrees for about 25 minutes.

7. Add fresh coriander on top of the pie before serving.

juice of one lime

1–2 centiliters of sugar syrup

1. Pour the distillate into a glass and squeeze in the grapefruit and lime juice.

2. Add 1–2 cl of sugar syrup

3. Add ice to the glass.

4. Finally, fill the glass with vichy.
