The Dutch winners of the prestigious Michelin stars will be announced on Monday afternoon. It is the most important awards ceremony of the year for the culinary sector. Tomorrow’s results are also exciting for the French brasserie De Juwelier in the center of Amsterdam. They hope to land their first star after only a year of doing business.

Since 1926, ‘Michelin’ has awarded dozens of stars every year to top restaurants around the world. The culinary sector in Amsterdam has grown rapidly in recent years: the city now has nineteen Michelin-starred restaurants, which together account for a total of twenty-two stars. After tomorrow afternoon, De Juwelier also hopes to be part of this exclusive group.

At De Juwelier they don’t do white linen tablecloths and strict, strict service. The tables are simply made of wood and there is an open, casual atmosphere. The menu is based on traditional French classics such as sweetbreads, kidneys and la piece de resistance: the marrowbone. A young restaurant deserves a young staff: Moriaan Koeleman is only 23 but already sous chef of De Juwelier.

Inspection
When the Michelin inspector came to eat, Moriaan recognized him right away. “They are almost always Belgians, and they always come to eat alone. Often reservations are made for two, but then canceled at the last minute. You can’t prepare that way.”
But when Moriaan had spotted the inspector, everyone did their best. “You let each other taste extra. The inspector had ordered the classic bone marrow, so that gives good hope for a star.”
But not everyone in the restaurant is waiting for a star. “I don’t go to a Michelin-star restaurant especially, then I only pay more money. So I’d rather not”, says a satisfied guest with a wink.
Tomorrow at 12:00 the stars will be announced in the DeLaMar theater.
