8 chicory

1 orange

15 grams of coriander. Don’t like cilantro? Then you can also replace it with parsley.

2 garlic

30 grams of walnuts

1 tablespoon apple or red wine vinegar

1.5 tablespoon of honey

200 grams of halloumi

Olive oil, salt and pepper

This is how you make it:

First make the orange salsa. Finely chop the coriander and garlic and the walnuts. Cut half an orange into cubes and squeeze the juice from the other half into a bowl. Add the coriander, walnuts, garlic, apple cider vinegar, half a tablespoon of honey and 2 tablespoons of olive oil. Stir together and season with some salt and pepper.

Cut the chicory lengthwise into four strips. Cut out the bitter, cone-shaped heart of the chicory. Heat some oil in a frying pan and fry the chicory for 2 minutes per side. Also add some honey, so that the chicory starts to caramelize. Season with salt and pepper.

Cut the halloumi into 1 cm strips and fry in a pan with olive oil until the halloumi is golden brown on both sides. Serve the chicory with orange salsa, halloumi and orange cubes.
