Skim milk

In Iceland, people have sworn by the health benefits of skyr for centuries. The dairy product is available in every supermarket as an alternative to yogurt or quark. But what’s the difference? Well, first off, skyr isn’t officially yogurt. It contains three times more milk than normal yogurt. It is made from skim milk, from which the cream has been removed. Then the milk is heated up and they add live bacterial cultures. Once the product has thickened, it is sieved to remove the acidic whey. Also in texture it doesn’t really resemble yogurt, more creamy Greek yogurt.

Soft cheese

It is also sometimes compared to cottage cheese. Cottage cheese is milk that has been acidified with lactic acid bacteria. Then the milk is thickened. Rennet or lactic acid bacteria are used for this, which make the milk thicken. The milk then leaks out, leaving a fresh, sour, creamy product. This product is called cottage cheese and is immediately edible. Cottage cheese is actually a type of fresh cheese that has not been matured, hence the sour taste.

Lots of protein

Skyr is low in calories, fat and carbohydrates. But it contains many nutrients, including proteins, vitamins and minerals. It has a high content of protein and calcium, but has a low fat content. For the amount of protein is very favorable. Research has shown that proteins from dairy products can regulate blood sugar levels, are good for your bones and help maintain muscle mass during weight loss. In addition, it makes you feel full, which reduces your appetite.

So yogurt can’t really compete with the Icelandic dairy hit, but the classic low-fat cottage cheese can. These are both low in calories and fat, but have sufficient protein. Still, many people prefer skyr over low-fat cottage cheese. This is due to taste. Skyr has a creamy and sweeter taste. However, it has a different price tag. Skyr is a lot more expensive.
