Leftovers from the refrigerator sink into Emmi’s surprise soup – this is how she reduces food waste and saves money

From Turku Emmi came up with a way to reduce food waste in his family. Every couple of weeks, we eat vegetable puree soup at home, in which, among other things, stems of carrots and broccoli are dipped.

Emmi has named the food “garbage soup”.

– We eat a lot of vegetables and roots, from which the stems are always cut off. At some point I realized that I was throwing them in the trash, even though it’s the same stuff, says Emmi.

Emmi started freezing vegetable stocks in boxes. In the same box, for example, half of a bell pepper that has gone rancid in the refrigerator is thrown. When the box is full, it’s soup day.

The base of the soup is usually potato or carrot, and a box of frozen waste vegetables and cream are thrown in. The soup is flavored with cottage cheese, seeds or roasted chickpeas.

– Soup will never be the same. It depends on what was eaten the previous week, Emmi says.

Emmi’s garbage soup

The instructions make about 6 servings of soup.

3 potatoes

7 carrots

From frost:

2 broccoli “legs”

1/2 red onion

3 cloves of garlic

1/2 bell pepper

1 chili

cherry tomatoes

1.5l of water

two vegetable stock cubes

2.5 dl of whipped cream

black pepper and salt.

Roasted chickpeas and cottage cheese as a side dish.
