250 g leftover pasta, better if spaghetti
5 eggs
1 teaspoon of paprika powder
100 g grated cheeses (parmesan, pecorino, smoked provola)
1/2 glass of milk
a few chopped mint leaves
20 g butter, extra virgin olive oil, salt and pepper
Method
In a bowl, beat the eggs with the cheeses, milk, mint, paprika, salt and pepper. Add the cold pasta, the flaked butter and mix well to mix all the ingredients. Heat 3 tablespoons of oil in a non-stick pan, pour in the mixture, level it with a spoon, and cook until a crust has formed on the bottom.
