Where Alko used to go to look for a suitable wine for a certain food, more and more customers enter the doors who want to choose wine first and only then think about what food could be offered with it, reveals Alko ‘s trend review 2022.

So wine is no longer always chosen to suit food, but vice versa.

– The customer will see what is nice on the drinking side or whether there is something new around which to build a meal package, said Alko’s Master of Wine, Taina Vilkuna At Alko’s media conference.

Drinks and food are freely chosen according to your own mood. Sparkling wine can be drunk throughout the meal if desired and red wine can also be combined with fish. The boundaries of an outdated label are being broken, or at least made flexible.

– If you like red wine and fish, that’s fine. Then choose a berry and fresh red wine and a slightly fuller fish with stronger spices and advise to cool the red wine a little before serving.

The hibernation doesn’t go away, but it changes

Hi-fiing is always, and still has been, part of the drinking hobby. However, hi-fi does not have to automatically mean an expensive price, but is increasingly associated with unique experiences, such as limited availability.

– For example, you want to be the first in your circle of friends to get a taste of a wine that comes from the volcanic soil of Tenerife or Sicily, or maybe be the first to taste a new variety of natural wines. Such products do not have to be in the highest price category.

The appreciation of local production is also now clearly visible in beverage trends. Other clear trends include responsibility, hybrid beverages and the growing popularity of non-alcoholic and low-alcohol beverages.

This is how you combine fish and wine

White wine

A nuanced and upright white wine from the Sauvignon Blanc grape

+

fish cooked raw with citrus, such as redfish.

Red wine

Berry and fresh red wine from Pinot Noir, for example

+

warm smoked salmon

Rose

Rose wine from Provence

+

more abundant fish soups such as bouillabaisse or fashion soup

Sparkling wine

Rich and toasted champagne

+

light fish fried in browned butter, such as pike perch Meuniére.
