INTERVIEW. Prof about the ‘real’ cost of our food: “Food expensive? We have never paid as little as today”

What we pay in the supermarket today is only a fraction of the real cost of our food, says professor Pierre-Alexandre Billiet (42). In his new book — an indictment against overconsumption — he also counts the climate and health care costs of unhealthy and unsustainably produced food in our stores.
