Japanese Cellato combined the finest and most luxurious ingredients to create the perfect ice cream.

The Japanese ice cream company Cellato took on the task of making the perfect ice cream. The end result of one and a half years of planning, experimenting and manufacturing was Byakuya ice cream, which is now listed In the Guinness Book of World Records as the world’s most expensive ice cream.
Byakuya – which means “white night” in Japanese – is made from white truffles grown in Alba, Italy. The luxurious delicacy has a luxurious price, as truffles can cost up to more than 13,000 euros per kilo.
In addition to white truffle, the ice cream contains Parmigiano-Reggiano cheese and sake kasu, which is a byproduct of the sake-making process. The whole is crowned with edible gold leaf.
Byakuya’s price is astronomical compared to regular ice creams: one serving costs more than 6,000 euros, according to the Guinness Book of Records.
– The development work took more than a year and a half, and it required a lot of trial and error to get the taste just right, Cellato’s representative commented to Guinness.
Cellato developed the ice cream in collaboration with the head chef of the acclaimed Osaka restaurant RiVi Tadayoshi Yamadan with. Yamada wanted to combine European and Japanese flavors in the ice cream.
Cellato describes the ice cream’s taste as rich and truffle-like. It also has a hint of fruity parmesan and sake, the maker paints. According to Cellato, the whole is “a great taste experience that fills the mouth and nose”.
According to the manufacturer, the ice cream should be allowed to melt at room temperature so that it has time to soften. Alternatively, it can also be heated in the microwave for a while if the consistency is too hard. Sake or French white wine is recommended as a side dish for the ice cream.
