Harri Syrjæsnes Pizzadog wants to offer the best pizza

Harri Syrjänen did not want to jump on the bandwagon of Italian genres, but decided to combine them with his own version.

Harri Syrjänen has been honing the perfect pizza dough recipe for over three years. Syrjänen has always liked pizza and, according to his own words, ate a lot of it, but the gas-powered pizza oven he bought at home took his passion to a new level. My enthusiasm slowly began to take shape into a thought; why not serve this to others?

On Wednesday, the idea became a reality, when Syrjæs and Noho Partners’ Pizzadog restaurant opened as a food home delivery service in Wolt in Helsinki. Pizzadog is a cloud restaurant with no customer seats.

Finnish pizza culture has developed by leaps and bounds in recent years, and especially in Helsinki there are already a huge number of pizza restaurants representing different styles. Outlier Pizzadog does not represent the Neapolitan trend any better than the Roman one.

– We represent good pizza. It’s great that there are different genres, but I think they all have something good and some flaws. We have combined the best aspects of the genres, summarizes Syrjänen.

Pizzadog’s pizzas are baked in a rotary oven heated to 450 degrees. According to Syrjæs, the pizza dough has acidity, softness and crispness in the right ratio.

– Rare pizza has it all. Naturally, the sauce is also a very important part, and of course also all the toppings.

Yes to pineapple

Pizzadog’s menu includes Angry Italian and Happy Italian pizzas. The angry Italian one has ham and pineapple, the happy one has prosciutto, mozzarella and arugula.

– All Italians get angry about this, but I can live with it. I’ve never really liked rules or restrictions in cooking, but I see more possibilities, Syrjänen acknowledges.

The most special pizza on the list is probably the chicken wings pizza, which uses boneless wings and buffalo sauce. It was born from Syrjæses’ own love for chicken wings.

– That’s when your brain gets confused when you’re not quite sure whether to eat pizza or wings.

The prices of pizzas are between 10 and 16 euros. Syrjänen says that the restaurant plans to open new locations on a fast schedule and also expand outside the capital region. Tables and chairs may be found in some of the future locations, but the main focus of the chain will be eating at home.
