Välimäki and restaurateur Matti Wikberg had spent the previous evening and night in the humus of San Francisco. The morning was, to put it mildly, grim, but the French Toast at the legendary Dottie’s True Blue Cafe changed everything and restored faith in life.
– Unfortunately, the restaurant closed its doors during Korona, but it was one of the toughest brunches in town at the time. At 9 a.m. on Sunday morning, the streets were deserted, but there was a 30-meter queue in front of the cafe. We stood for an hour in the hot sun, it was worth it. We got our seats from the counter and we will take this dose, Välimäki recalls the turning point.

– Some make French Toast in brioche, but then I think it becomes too greasy. I use a bun that is lightly dipped in egg-milk flavored with sugar and cinnamon, Välimäki guides.
French Toast is delicious to be served with brunch, for example. Although food is very important to Välimäki, one thing goes by it: Even more important than the food eaten at brunch is that there is more than one person sitting at the table.
The most important criterion for a successful brunch is people.
– It makes a special brunch if you get to enjoy it with family or friends or with both. The more gangs around, the better. It’s about being together, Välimäki concludes.

French Toast, American poor knights
4-8 slices of bun or brioche bread
1-2 teaspoons cinnamon
1-2 teaspoons vanilla sugar
2-3 tablespoons sugar
3-4 eggs
3-4 dl of milk or cream or both
For the pan:
3-4 tablespoons sugar, color does not matter
3-4 tablespoons butter
On the surface:
fresh berries to taste
For decoration:
icing sugar
In addition, offer:
a few crispy fried bacon slices
french fries
fresh berries
maple syrup
1. Mix cinnamon, sugar, vanilla sugar, eggs and milk / cream in a bowl. Dip the bun, brioche or bread slices in the mixture so that the slices begin to soften on both sides but are not yet completely wet.
2. Heat a frying pan and add sugar to the pan. When the sugar begins to melt, add the butter and soaked bun, brioche or bread slices and fry until golden brown and crispy. However, the bun slices should be soft-mouthpiece on the inside. Then they are made correctly.
3. Serve with bacon, berries and french fries and maple syrup. Finally, garnish with icing sugar.
