If you want, you can put coconut milk instead of whipped cream. But Rahkonen wouldn’t give up two spices: Cajun spice and ginger. According to him, they are super important.

Rahkonen got the inspiration to develop the recipe one evening from a friend.

– My friend covered a large pot on the dining table, which was filled to the brim with red lentil soup. The smell was intoxicating and we finished the soup.

Rahkonen adapted his own version of the recipe found by his friend, which has since ended up in the kitchens of thousands of Yellow Mood website readers.

The best lentil soup in the world

(6 servings)

2 tablespoons of butter

3 cloves of garlic

1 large onion

2 teaspoons of turmeric powder

1 tsp ginger powder

½ tsp Cajun seasoning mix

1-1 ½ tablespoons of sea salt

3 dl dry red lentils

800 g of crushed tomatoes

1.1 liters of water

2 dl whipped cream

1. Measure the dry lentils into a strainer and rinse thoroughly with cold water until the water is no longer cloudy.

2. Peel the onions and garlic, cut into small pieces with a sharp knife. Measure the chopped onion, powdered spices and butter into a large pot.

3. Sauté the mixture over low heat until the onions are soft.

4. Add tomato paste and water to the onion mixture. Let the mixture boil for a few minutes and then add the lentils.

5. Stir and let the soup boil under the lid for 30 minutes on low heat. Turn off the plate, add whipped cream and check the amount of salt.
