For 2 to 3 people
- 150 grams spelled
- 250 grams of cherry tomatoes
- Half cucumber
- Half zucchini
- 1 small red onion
- 2 tablespoons (or more) Kalamata olives
- 1 tablespoon of oregano
- 75 grams of feta
- Juice half a lemon
- 1.5 tablespoon of extra virgin olive oil
- Salt and pepper
This is how you make it:
Cook the spelled for 10 minutes in plenty of boiling water. Meanwhile, cut the cherry tomatoes in half, the cucumber and zucchini into cubes and the onion into thin half moons. Grill the zucchini briefly in a frying pan and season with salt and pepper.
Once the spelled is cooked, drain it. Season the spelled with salt, pepper, oregano, the juice of half a lemon and extra virgin olive oil. Put all the vegetables in a bowl and stir in the spelled. Season the salad with extra feta and olives.
