Spruces are the first signs of summer, but collecting them requires permission. They can also be used to engrave salmon. This is definitely not to be missed. Now is the time.

In Moilanen’s engraving recipe, in addition to spruce tops, there is also grated lemon zest on the surface of the salmon.

Salmon engraved with spruce

1 kg of salmon

3 tablespoons coarse rose salt

2 teaspoons cane sugar

Grated peel of 1 organic lemon

2 dl chopped spruce beans

garnish with whole cucumbers, crushed rose peppers and coriander seeds.

1. Apply sugar first, then salt to the surface of the salmon.

2. Chop the spruce crusts, grate the peel from the organic lemon and spread the chop evenly on the surface of the fish.

3. Wrap the fish tightly in parchment paper, then in foil and refrigerate overnight.

4. Wipe the finished gravy fish clean of spices and cut it into thin slices. Place the slices in a serving dish and decorate the surface with whole cucumbers and crushed coriander and rose pepper seeds.
