Behind the perfect composition of flattened french fries is that the potatoes are boiled for a moment before they are roasted in the oven.
Second, behind their delicious taste is the addition of apple cider vinegar to their boiling water. This may sound a bit strange as an idea, but if you like salt and vinegar pips, for example, you’re sure to like these potatoes too. Vinegar brings a little acidity to the taste of the potatoes.
To counteract the acidity, the potatoes should be served with unflavoured Greek yogurt, which adds a little creaminess to the portion.
Flattened french fries
(supplemented with 6 servings)
900 g of small potatoes
2 dl + 2 tablespoons apple cider vinegar
1 tablespoon salt + add for seasoning
1 dl olive oil
2 teaspoons onion powder
2 chopped garlic cloves
black pepper mill
Grated 2 dl cheddar cheese
1 dl fresh herbs like parsley, basil or dill
2 tablespoons chopped chives
5 dl unflavoured Greek yogurt
1. Preheat the oven to 225 degrees.
2. Place the potatoes, 2 dl of vinegar and salt in a larger saucepan. Add enough water to just cover the potatoes. Bring to a boil and then lower the temperature to medium heat. Allow to bubble for 15 minutes until potatoes are slightly softened. Pour off the water and fold the potatoes on a baking sheet lined with parchment paper. Let cool for a while.
3. Place another baking paper on top of the potatoes and flatten them each time, for example with a cup. Sprinkle olive oil, onion powder, garlic and season with salt and pepper on top of the potatoes. Transfer the tin to the oven and roast the potatoes until golden brown, about 25 minutes.
4. Take the tin out of the oven and sprinkle the grated cheese over the potatoes. Mix well and put back in the oven for about 10 minutes.
5. Sprinkle 2 more tablespoons of vinegar, herbs and chopped chives on top of the finished potatoes.
6. Spoon the yogurt on a serving plate and add the potatoes next to it. Sprinkle with salt flakes and enjoy!
