The child has been given a name: the new brasserie of Peter Goossens (59) in the renovated Knokke luxury hotel La Réserve will be called La Rigue. Goossens aims for absolute top quality and wants to serve the best shrimp croquettes from the coast and far beyond: “I’m already on my 18th test recipe.” We went on an exclusive visit and were shown around the new business.
