– In addition to being easy, the store’s meringue sheets are also durable, and they don’t dry out as quickly as homemade ones, says the food supplier Mari Moilanen.
Even a child or a slightly darker confectioner can make this cake.
Raspberry meringue cake
(for 8 people)
3 prepared meringue sheets
5 dl of cream
2 dl lemon or lime curd (lemon paste)
4 boxes of raspberries
Zest of 3 limes
100 g of white chocolate
lemon balm leaves for decoration
1. Grind white chocolate. Spread the grits on a baking sheet over baking paper. Toast the crumbs in a 200-degree oven for 3-5 minutes until the chocolate turns slightly golden brown. This step can also be omitted.
2. Wash the lime well and grate the peel.
3. Whip the cream until frothy and mix in the lemon or lime curd and half of the grated lime peel.
4. Spread 1/3 of the foam on the first meringue sheet. Sprinkle raspberries and some of the grated, roasted white chocolate on top. Place another sheet of meringue on top and add whipped cream, raspberries and white chocolate.
5. Place the last plate as a cover. Spread cream on top and decorate the surface with the remaining raspberries and lime zest, lemon balm leaves and roasted white chocolate.
