Easy instructions for frozen peas – pea puree and pea rice

At this time of the year, the vegetable selection in the freezers is a very good option. One perennial favorite is frozen peas.

It’s good as it is, but with a little extra effort, you can make a really delicious snack out of peas.

Chefs Risto Mikkola and Hans Välimäki share their own pea recipes.

Mikkola recommends a rice that elevates ordinary everyday rice into a downright luxury. Make a creamy pea puree that you mix into the rice.

– The puree binds the flavors to all sides of the rice and a whole pea is its companion. The rice tastes incredibly good, says Mikkola.

And it’s not about any special rice, but ordinary long-grain sawdust rice is suitable for this dish.

Välimäki, on the other hand, gives instructions for a pea puree suitable for many dishes. It is great with fried fish, for example.

Pea rice

3 dl rice without sawdust

200 g of frozen peas

1 teaspoon of salt

1 liter of water

350 g of pea puree

1. Put water, salt and rice in the pot. Cook in boiling water for about 10 minutes. Strain the water from the rice and rinse the rice.

2. Heat the pea puree in a pot and add the hot rice and whole peas. Mix well and serve immediately.

Pea puree

200 g of frozen peas

1 dl whipped cream

50 g of butter

1 teaspoon of salt

1. Put all the ingredients in a pot and boil for 2 minutes.

2. Purée into a smooth puree in a blender or with a hand mixer.

Pea puree

200 g of frozen peas

2–3 dl of water for boiling the peas

salt

3–4 tablespoons of butter

mint

2–3 tablespoons of chives

pepper

1. Heat the water in a pot and add the frozen peas.

2. When the water boils again, puree the peas into a coarse paste with a stick blender. Season with herbs, salt, pepper and butter.

3. Check the taste and serve hot.
