Despite its name, Charles’ coronation pie is easy to make – Here’s the recipe

In honor of the coronation of King Charles, the Coronation Quiche was born in the British court.

The coronation pie is filled with cheese, spinach and beans.

Hovi’s website says that the pie can be eaten either cold or warm with a green salad and boiled potatoes. That is, a perfect coronation day lunch in authentic British style.

Coronation pie

Base:

125 g wheat flour

salt

25 g cold butter, cubed

25 g lard (or butter)

2 tablespoons of milk

OR

1 pkt ready-made pie dough

Filling:

1.25 dl of milk

1.75 dl of whipped cream

2 eggs

1 tablespoon of fresh tarragon, chopped

salt

pepper

100 g grated cheddar cheese

180 g chopped cooked spinach

60 g broad beans or soybeans

1. Sift the flour and salt into a bowl. Add the fats and use your fingers to form a crumbly mixture.

2. Add milk little by little until the base becomes doughy.

3. Place the dough covered in the refrigerator for 30-45 minutes.

4. Sprinkle flour on the table and roll out the dough into a round pie base, about 0.5 cm thick.

5. Press the dough into the greased pie pan. Put in the fridge for another 30 minutes, covered.

6. Bake the pie crust in a 190-degree oven for 15 minutes. Reduce the oven temperature to 160 degrees and prepare the pie filling.

7. Mix together milk, cream, eggs, tarragon and spices.

8. Sprinkle half of the grated cheese over the base, put chopped spinach and beans on top. Then pour over the egg-milk mixture. Sprinkle the rest of the cheese on top.

9. Bake the pie in the oven for 20-25 minutes until its surface is golden brown.
