Curtain falls over Den Gouden Harynck
Chef Philippe Serruys turns 70 and will soon receive his last guests. Tomorrow a new life will start for him and his wife Marijke Van Damme. “Most of the colleagues I started with in the past have long since retired. I have no problem with that. I still love doing that. I think it’s the best profession in the world.”
Participating in hypes was not for him. But people loved to come. Those who save months for it, but also the beau monde from far and wide. “There have been many, including royal ones, both from the Belgian royal family and from the English.”
According to Serruys, running a star restaurant is mainly teamwork. “We have three people who have been working here for more than 30 years. That is quite something in the hospitality industry. That is quite unique even. As long as the ambition and passion are there, you have to keep going. That is the driving force.”
Today Den Gouden Harynck is full. Tomorrow night, the retired chef is having dinner with friends. Prepare something delicious for such a person….
