Charming bunny muffins are so good and pretty that you can convince them to be homemade.
Counting bun muffins
(18 pieces)
3 eggs
2 ½ dl cane sugar
3 ½ dl spelled flour
2 teaspoons ground cardamom
2 teaspoons baking powder
100 g of melted butter
1 dl milk
Almond filling
150 g of almond paste
1.5 tablespoons milk
Whipped cream
2 dl whipped cream
2 tablespoons icing sugar
Finally
icing sugar for decoration
1. Mix the dry ingredients together. Whisk the eggs and sugar until foamy. Invert the icing sugar in small batches, alternating dry matter, milk and melted butter.
2. Spoon dough into muffin tins, leave 1/4 insufficient. Bake in a 180 degree oven for about 15 minutes. Cool to room temperature.
3. Prepare the fillings. Grate the almond paste and soften it with a drop of milk. Whip the cream to a froth and season with icing sugar. Put the fillings in the extruder bags.
4. Remove the muffins from the muffin tins and cut off the cap. Fill the muffins with almond paste and whipped cream. Garnish with icing sugar.
