When it’s deep into autumn, pumpkins bring joy and sunshine to the dining table as well as to the interior.

In this recipe, the pumpkin ends up roasting on a baking sheet in the oven, because the taste of pumpkin is at its best when roasted. The nuts bring a crunchy mouthfeel to the soft pumpkin.

There are differences in pumpkins, so it is not the same which pumpkin is used for which food.

I personally prefer the cone-shaped musk pumpkin in oven-roasted pumpkin delicacies, pumpkin puree and baking, because the musk pumpkin is dense and not watery in the same way as, for example, a large Giant Pumpkin.

Pumpkin can also be cooked by boiling it in water, but roasting is definitely the best way to make the most of this fall delicacy. In the oven, the pumpkin gets a depth of flavor and roasting also gives it a little sweet tinge.

Pumpkin is a nice vegetable because it can be used from a to z. The skins can be pickled, the insides can be used for meals, and the seeds can be roasted into snacks.

Roasted pumpkin and nuts

(for 4 people)

1 medium-sized musk gourd

1 dl of cashew nuts

1 dl pumpkin seeds

1 dl sunflower seeds

1 tablespoon of olive oil

1 tablespoon runny honey

1 teaspoon of ras el hanout spice mixture

1 teaspoon of salt

a few grinds of black pepper from the grinder

1. Cut the pumpkin into slices about a centimeter thick and grind the cashew nuts into a coarse grit. Spread the pumpkin slices on a baking sheet and sprinkle the nuts on top.

2. Drizzle oil and honey over it. Season the slices with ras el hanout spice mixture, salt and black pepper.

3. Roast at 225 degrees for about 20 minutes until the pumpkin is cooked through with a fork.

Can decorative pumpkins be eaten?

In grocery stores, you may come across soma’s variegated decorative pumpkins. You may have wondered if these could also be used in cooking. But no.

Small decorative pumpkins have a bitter taste, some can be poisonous and the amount of flesh is scarce.
